Will the subtitles or transparent background in my QuickTime clip survive this audio export?

It can, especially with music. Use a higher Q value to reduce compression artifacts; voice can usually tolerate a lower Q, but damage from an overly low setting cannot be recovered later.
If I convert this to OGG, can I bring it back into an editor later?
You can edit the resulting audio, but the video frames are gone. Converting it back into a QuickTime container later will not recreate the picture or any audio detail lost to a low Q setting.
